It all started about 5 years ago. I started making basic pancakes, out of the box, for my two daughters. I would then start adding chocolate chips or apple sauce or cinnamon or all 3. In November of 2013, decided to try a recipe, from scratch, and documented the process on my Instagram account. Red Velvet pancakes with a cream cheese glaze. I still remember that first batch.
I started searching for recipes and trying to figure out this whole pancake game. There are tons of fantastic food bloggers that I came across and I would get ideas and recipes from their sites. I continued to post these on my Instagram account and the whole thing took off.
So, why “Huddy’s Hotcakes?” This was the brainchild of my kids. We were enjoying some pancakes and having fun with the idea of opening up a pancake house. We needed a name and some marketing. My nickname, among others, is “Huddy.” It was only natural that we would call the place, “Huddy’s Hotcakes.”
Almost every Sunday, you will find a new creation. I have a buttermilk pancake recipe that I typically use as the base for each creation. The rest is an experimentation in flavors and combinations. Most are good, some are not so good, but they all end in smiles and laughter.
I’ll look to post some recipes, periodically. For starters, here is my basic buttermilk pancake recipe:
- 2 cups flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 2 eggs
- 1/4 cup vegetable oil
- 1 tsp vanilla
In a large bowl, whisk together the dry ingredients. In a separate bowl, combine the wet ingredients. Then, combine both.
Yield: 16-20 pancakes.
