Hello? Is this thing on? Wow, it has been awhile since I’ve posted, at all, and even longer since I’ve put up a new pancake recipe. Let’s just say that work, life, and a lack of creativity have all played a part in my pancake absence. But we are now into December and it’s time to bring in the holiday flavors for Huddy’s Hotcakes.
The gingerbread pancakes are one of my favorites. They are packed with so much flavor and the touch of a powdered sugar glaze in the perfect icing on the pancake.
For the pancake, I was inspired by the “Creme de la Crumb” blog. Check out Tiffany’s site as she has tons of great ideas. I used the Huddy’s Hotcakes base and added the following to the dry ingredients (all heaping spoonfuls):
- 1 teaspoon cinnamon
- 3/4 teaspoon ground ginger
- 1/8 teaspoon cloves
- 1/8 teaspoon nutmeg
To the wet ingredients, I added:
- 2 tablespoons molasses
- 1/4 cup dark brown sugar
(Ok, fun little story. Back in high school, my basketball coach used to yell at me, “Huddy, you’re as slow as molasses in February!” Every time I use molasses, I can’t get Mr. Smith’s voice out of my head. I never understood how slow I really was until I started cooking with molasses.)
For the glaze, I went with this basic recipe. So simple.
These pancakes were the perfect kickoff to the holiday season. I’m looking forward to the next few weeks and bringing out the snickerdoodle, red velvet, and a few other holiday surprises.
