I have taken a few weekends off from the pancake game. Crazy weekend schedules and a long Memorial Day weekend kept the griddle at bay. Quite frankly, I’m running out of some creativity when it comes to some new recipes. This morning was no different. I had no idea what kind of pancakes I was going to make, but I knew I would at least make some buttermilk pancakes.
After a nice long run, I came home to get the kitchen going. There were several ripe bananas waiting to jump into some muffin mix so I decided to add them to the batch. During the week, I add a spoonful of peanut butter to my oatmeal and that gave me the idea to add peanut butter to the wet ingredients. Just like that, I had some pretty tasty pancakes.
For the recipe, I used the basic Huddy’s Hotcakes and added 2 mashed bananas and a 1/4 cup of peanut butter.
This is about as healthy a pancake that I will create. I never intentionally try to make any pancakes that have some healthy qualities to them. While I’ve had some good protein pancakes or other low carb/low sugar options, I feel life is too short to eat healthy pancakes. After all, that’s why I run!
