“What kind of pancakes would you like in honor of your birthday?” I knew the answer to this question before I asked my youngest daughter. She celebrates a birthday, this week, and this Sunday’s batch is in recognition of her milestone.
The double stuff Oreo pancakes are #1 in the minds of my kids. These pancakes are nothing more than a big pile of yummy chocolate dessert goodness. My pancakes have never been on the healthy side of the aisle and I don’t intend to ever go that route. These pancakes lead the way in the “fun for you” category.
This morning’s version added a different flavor of Oreo cookies. Yes, can you believe all of the different flavors there are to choose from now? For instance, in our cupboard we currently have Golden, Chocolate Hazelnut, and Mint Creme. Those Mint Creme Oreo cookies are all mine. Get me a tall glass of cold milk and a row of the cookies and I’m in heaven. That’s why I was so happy when my daughter chose them for this batch.
For the pancakes, I used the Huddy’s Hotcakes recipe and added about 1/4 cup of cocoa and 1/2 cup of crushed Mint Creme Oreo cookies. For the “stuff” I followed the Spicy Southern Kitchen recipe and used the Mint Creme Oreo cookies in place of the regular. With the temperature at 20 degrees outside, I just put the mixing bowl on our porch for about 10 minutes to give it the chill.
Admittedly, these are some of my favorite pancakes, too. They are so much fun to make and definitely start the morning of right by putting my daughters in a great mood. And after a 5 mile run through the snow, these pancakes hit the spot.
