Funfetti Pancakes

Happy New Year! What better way to ring in the new year than with some pancakes. And these aren’t just any pancakes. These are Funfetti pancakes. For many, 2017 was not very fun-filled, but that doesn’t mean 2018 has to be that way. While you may not be able to control many of the events, you can control what you eat. Eating should be fun and enjoyable and these Funfetti pancakes are no exception.

This recipe was adapted from the Taste of Lizzy T website. Check out their site for some delicious ideas. I changed it up a bit and went away a bit from the Huddy’s Hotcakes recipe.  Here are the ingredients:

  • 1 box Funfetti cake mix
  • 3/4 cups flout
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs
  • 2 1/2 cups buttermilk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla

Combine the dry and and wet ingredients separately. Then combine wet and dry.

For the whipped cream, I used this simple recipe. I went with the whipped cream because I had a cup of heavy cream in the fridge and only about a half cup of powdered sugar. I didn’t have room in my freezer for my stainless steel mixing bowl so I just set it outside for 10 minutes. At -2 degrees, that thing chilled in a hurry.

These pancakes were a perfect start to the new year. I’m going to take some time to relax before I jump back into the kitchen to start my New Year’s Day tradition of making a big pot of chili. I’ll also be venturing out for a run at some point. It’s pretty damn cold, but I have to get the year started off on the right foot. Even if that foot may be a little cold.
