Merry Christmas. All of the presents have been opened, the dishes are done, and one or two or so mimosas have been consumed. With a balmy 14 degrees in the Chicagoland area, it’s time to settle in for a day full of playing with some toys, watching A Christmas Story for the 5th time, and some football. And it will soon be ready for an evening of more good food and drink.
The red velvet pancakes are where it all started for Huddy’s Hotcakes, four years ago. This recipe has been our Christmas breakfast tradition for several years. I also added a Cowboy Quiche by the Pioneer Woman. Throw in some bacon and a mimosa, and I’m all set until dinner. Or lunch.
The pancakes are pretty simple. I used the Huddy’s Hotcakes recipe and added 3 tablespoons of cocoa powder and a 1.5 tablespoons of red food coloring. I also made a cream cheese glaze. I followed the recipe from the great site, Cooking Classy. Check out the rest of the site as there are many great ideas.
