Rolling into December, it’s time for some more winter flavors. And what better way to kick it off than a batch of snickerdoodle pancakes with a warm cinnamon vanilla glaze. I like the winter holiday months with some favorites like gingerbread, red velvet, and cinnamon roll, just to name a few.
After a long run in some colder temperatures, I decided to step it up with a warm glaze. I have made many variations of these pancakes and I adapted this morning’s version from the No. 2 Pencil blog. Melissa has a fantastic blog and I got a lot of inspiration and ideas from here in the early days of Huddy’s Hotcakes. Check out her cinnamon roll pancakes, too!
For the pancakes, I used the basic Huddy’s Hotcakes recipe and added 2 teaspoons of cinnamon, 1/4 teaspoon of nutmeg to the dry ingredients. I then added about a half cup of sour cream to the wet ingredients.
I followed Melissa’s recipe for the warm cinnamon vanilla glaze. For this batch of pancakes, I’d recommend doubling the amounts for the glaze. This topping is amazing.
These pancakes are incredible. They are a perfect start to the holiday season and even better on the second helping. Yes, I ate 5 of these. So good.
