We are getting closer to the fall season. One of my favorites, especially when I’m making pancakes. I love mixing in the spices and fall flavors like cinnamon. Of course, it has been 85 degrees and sunny, all weekend, so we aren’t out of the summer season just yet.
Given the warmth outside and our fruit basket full of some very ripe pears, I decided to go with some cinnamon pear pancakes. These were pretty simple. For the pancakes, I used the basic Huddy’s Hotcakes recipe. I then shredded 3 small pears into a bowl and added about a teaspoon of cinnamon and mixed them up. I added this to the batter and let sit for about 5 minutes.
These were delicious. Much to the disappointment of my oldest daughter, there was no glaze, but plain old maple syrup did the trick. After back-to-back 8+ mile runs, this was the perfect refueling batch. And refueling I did. Add a few slices of bacon and I’m primed for a nap.
